  • you can remove up to 50g of butter, but the less butter there is, the drier the biscuits become
  • icing sugar can also be obtained from cane sugar, just put it in the blender (in small quantities) and then sift it (if necessary)
  • those who don't like cinnamon can use vanilla
  • dark jam (such as blackberries) or hazelnut cream
  • powdered sugar

  • a few tablespoons of orange juice
  • the procedure with chocolate is not essential, but it gives our puppets more credibility

  3. we add the rest of the ingredients
  4. we work the ingredients vigorously, mixing them until you get a compound that is free of lumps
  5. put the dough in a bowl, cover it with a plate (or wrap it in cling film) and put it to rest for a day in the refrigerator
  6. pre heat the oven to 160 ° C
  7. we take the dough out of the refrigerator and let it dissolve (not too much, just to be able to work it)
  8. sprinkle the flour on the work surface and roll out the dough with a rolling pin until you get a thickness of about 3 / 4mm
  9. with the stencil we always cut out some shapes in pairs and transfer them on the parchment paper with the help of the spatula or scraper
  10. already on the pan we make small holes with the help of a straw in order to create the buttons
  11. we bake the cookies for about 10 minutes, they must take on the gold color
  12. once cooked and cooled, spread the base of the biscuit with jam or cream and glue the 2 biscuits one on top of the other
  13. we sprinkle biscuits with icing sugar
  14. in a saucepan in a bain-marie we melt the chocolate with orange juice
  15. we dip the hat of the puppet in chocolate and let them dry on baking paper
  16. once done they are put in a box in layers divided with parchment paper
  • while we work the dough, we must be careful not to heat it too much, otherwise it begins to stick to the hands and it is not possible to work well
  • to avoid this we can either cool our hands under cold water or put the dough in the refrigerator for a moment
  • the dough can be used a few hours later, but I prefer to let it rest for at least 12 hours, so all flavors and aromas spread into the dough
  • after the first cut there are many small pieces that are usually too hot to work immediately, but just make a ball or a disk, put it in the fridge and after a while you can start again
  • already cooked biscuits must not be brownish in color, in case we have gone a little beyond cooking we take the biscuits out of the oven and with paper we remove them from the pan, in this way the cooking stops immediately
  • I keep the biscuits in a slightly humid and cold room 15 ° C, for those who do not have the possibility can put them outside (at least it does not freeze) or in a room as cool as possible
  • the more we let them rest, the tastier and tastier they become
